Bonjour! Aurore French Bakery brings authentic French pastries, breads, and café culture to Bozeman. We opened our storefront in May 2023 after years of growing through farmers markets and events. We’re expanding our kitchen team and looking for a dedicated Croissant Baker (Tourier) to join us and grow with the business.
Our team includes a bread baker, pastry chef, assistant baker, tourier (croissant baker), baristas/cashiers, assistant manager, and manager.
About the Role:This is a hands-on, fast-paced, and physically demanding role. You’ll be responsible for crafting traditional French laminated pastries with precision and consistency. Early mornings and attention to detail are key.
Responsibilities include:
- Assisting the Tourier Chef in preparing and laminating dough for croissants and other viennoiseries
- Assisting the Tourier Chef in preparing and laminating dough for apple turnovers, flans, and other puff pastries
- Assisting the Tourier Chef in shaping, proofing, and baking croissants, pains au chocolat, and similar items
- Assisting the Tourier Chef in monitoring dough temperature and consistency throughout the process
- Ensuring quality of proofing, egg washing, baking all the products
- Adding the last touches to finish the products such as Croinamon, Flans, Apple Turnovers, monthly specialties, etc
- Ensuring the production of the brioche dough, from making the dough to divide, round, proof, bake, and fill the final products
- Maintaining a clean and organized work area
- Assisting with inventory management and ordering supplies
- Collaborating with the pastry team on new product development
- Adhering to food safety and cleanliness standards
Schedule:
- Wednesday: 6:00 AM to 2:00 PM
- Thursday to Sunday: 4:00 AM to ~11:00 AM
- Full-time, year-round (not seasonal)
What We’re Looking For:
- Experience with laminated doughs is preferred
- High energy and physically strong (able to lift up to 55 lbs)
- Reliable, punctual, and focused
- Coachable and open to feedback
- Able to multitask and work well under pressure
- Comfortable working on your feet for long hours
- Curious about French baking and culture
Not a fit if you:
- Prefer a slow pace or don’t like physical work
- Can’t commit to weekends or early mornings
- Struggle with structure or teamwork
- Aren’t looking for a long-term role

My name is Aurore Adam and I am the founder and CEO of Aurore Bakery. I used to live in Paris, France but fell in love with Bozeman, Montana after I visited my twin sister over vacation. My baking journey began in my kitchen but I wanted to take my skills to the next level so I was very fortunate to have Gontran Cherrier, Anthony Courteille, Patrick Dupont, and Maximilien Tetard as my mentors. My key takeaway from the Bakers and Chefs I trained under was that baking takes practice, patience, and passion so I can’t wait for you to stop by the bakery and bite into one of our croissants or take home a hot baguette or two. Right now, we are working out of our production warehouse but we hope to open another location downtown Bozeman so that people can sit down and really experience our French baked goods.
